The 7-Zip Create action accepts ANT patterns for the File Names / Patterns fields. When using ANT patterns, *.* only matches files in the root folder. To match all files in all any directory, use **.
Your post has however highlighted an issue where the “Log files which match pattern” checkbox is not actually causing the action to log anything. We will get that fixed for the next release.
